Pho Anyone??

I am looking for a good vegetarian version of Pho, Vietnamese soup in which the broth is traditionally meat-based. I'm also making my split pea soup and possibly some matzo ball if I get to it. My throat is scratchy and I have been short on sleep because Lukas has been waking me up between one and two in the morning. This means I don't typically get back to sleep until sunrise, if at all. While he is doing reasonably well, I am tired and very sorry that my posts have been lacking.

If I come across a pho recipe you could use, I'll give you the info.

That split pea soup sounds good in the meantime.

Snap. Jazz is waking me at about that time too. (He let me sleep in till nearly 3.30 this morning).
Sorry no recipe for pho for you. I hope you find one. And that you/we get some rest.

Oh, Lukas! Let your lady sleep!
I wish I had a sure-fire recipe for Pho to give you but I do not. It is a most delicious soup, though, isn't it?

Nothing worse than a constant lack of sleep. I've had issues with my teeth which mean I haven't been sleeping at night which makes me feel like a zombie all day.

I thought Pho was a typo for photo. :D

Here's a vegetarian pho recipe from a site I like, love and lemons. Not too many ingredients, and most of them you may well already have in the pantry. Let us know if you make it and how it turns out.

Lack of sleep makes everything else worse. I have to sleep in two shifts because one of my cats seems to get sick if she doesn't eat every four or five hours. Sometimes I can't get much of a second shift and it ruins the day. I feel for you.

I've never had Pho let alone vegetarian Pho but if the meat broth is the issue, could you try a vegetable broth as a base? Campbell's has veg broth in the shelf-stable boxes. I hope you find a recipe.

I've just had a look at Wisewebwoman's suggested recipe and the author does say that vegetable broth doesn't have the depth of flavour needed, but she suggested a fix for that. Her soup sounds delicious.
